True lavender is a small, perennial shrub, 30 to 60 cm tall, belonging to the Lamiaceae family. It is recognizable by its finely cut, grey-green foliage and its particularly fragrant, purple flower spikes. Its characteristic scent, both floral and herbaceous, makes it one of the most emblematic aromatic plants of the Mediterranean basin.

It grows naturally in dry, well-drained, calcareous soils, often at high altitudes, on the sunny slopes of the garrigue and hills of Provence. Highly drought-resistant, it adapts well to hot and windy climates. Its cultivation is widespread in the south of France, particularly in the Drôme, Vaucluse, and Alpes-de-Haute-Provence regions, where it creates vast, bluish landscapes in summer.

The flowering period, which occurs between June and August, attracts numerous pollinators such as bees, contributing to local biodiversity. In addition to its ornamental value, true lavender is widely used for its essential oil, which has soothing, antiseptic, and regenerative properties, whether in aromatherapy, cosmetics, or skincare.
