The lime, also known as the green lemon, is a small fruit tree in the Rutaceae family, with glossy, dark green, evergreen foliage. It produces delicate, highly fragrant white flowers that add both ornamental and aromatic value to the garden. It thrives in warm, sunny regions, with a marked preference for well-drained, light soils. Cultivated primarily in subtropical and tropical zones, the lime requires regular, but not excessive, watering, as well as good protection against frost. Its small fruits remain green when ripe and are very juicy. Their bright, tangy flavor, more intense than that of a yellow lemon, makes them a choice ingredient in cooking, baking, and beverages. Rich in essential oils concentrated in its peel, the lime is also used in perfumery and aromatherapy for its fresh and invigorating fragrance.
