Sweet fennel (Foeniculum vulgare var. dulce) is a perennial herbaceous plant in the Apiaceae family, recognizable by its hollow stems, finely divided leaves, and distinctive aniseed aroma. Its elegant, airy, and delicate form makes it as decorative as it is useful, both in the vegetable garden and in the wild in temperate zones.

It thrives in well-drained, light, and sunny soils, often along field or garden edges, but also in wastelands and Mediterranean meadows. Sweet fennel prefers warm, sunny locations and requires little maintenance. Once established, it can reach up to 2 meters in height, forming large, tender green clumps.

In summer, it develops large umbels of fragrant yellow flowers, which attract a multitude of pollinating insects. Its seeds are harvested when ripe for their sweet, mild aroma. Used in cooking, as an herbal tea, or as an essential oil, sweet fennel is renowned for its digestive, carminative, and soothing properties, particularly for intestinal problems and bloating.
